There are three basic kinds of fruit mead: melomel is made with any fruit; cyser is made specifically with apples and/or apple juice; and pyment is made with grapes. Whatever fruit is used, the ingredients should be expressed in aroma, flavor, and color, but the honey character should still be in evidence. All three types of fruit meads can be sparkling (effervescent) or still (not effervescent).
